Flashing these kernels is similar to flashing roms but won't clear your cache. Custom kernels give improvements that give us additional features from our hardware that the stock kernel does not. Examples include overclocking a device to framerate issues, Kernels are involved with that. Its up to you to choose the best kernel to use with a ROM. You can always stick with the one that comes with a custom ROM.
